Ingredients

  • 235ml nondairy milk
  • 150g silken tofu
  • 1 tbsp vanilla extract
  • 100g cream from the top of a can of coconut milk
  • 150g sugar

Method

  1. combine all ingredients in the bowl of a blender or food processor and blend until smooth

  2. transfer to ice cream maker and follow manufacturer's instructions

  3. Transfer to plastic container and freeze

Notes

You can eat this as a vanilla ice cream or add/top with whatever extra flavours you want! One of my favorites is chopped bananas. It's certainly better with some added flavors as otherwise the coconut stays pretty present, if you don't like that.
